Gathering Place Announces Executive Chef
NEW APPOINTMENT: Chicago resident Kirk Swaby was recently named the Gathering Place’s Executive Chef.
The Gathering Place will be known for its world-class designs, attractions and never-before-seen programming. The Park is also working to create a culinary experience as one of the must-do engagements for park guests. The task of delivering this culinary experience will largely depend on the menu selection and skill of its recently appointed Executive Chef Kirk Swaby.
Swaby, a recent transplant from the city of Chicago, nurtured his skills at the prestigious Le Cordon Bleu College of Culinary Arts as well as at Canada’s highly respected George Brown Culinary School. Swaby then perfected his style of cooking while self-operating Mange La Vie, a private boutique catering company in Chicago. Honing his craft by specializing in the creation of distinctive fusion cuisines, he defines this process as the ability to tastefully and artistically create unique flavors by meticulously blending the world’s traditional dishes with eccentric mixes of herbs and spices. Swaby believes that food can be both fun and healthy, a principle that will be infused in all he does at the Gathering Place.
A common theme throughout Swaby’s culinary career is his belief in making food an experience that unites people from all backgrounds. When asked about creating menus for Gathering Place, Swaby explains, “I want people to encounter flavors and textures they don’t encounter on a regular basis.”
Of his short time in Tulsa so far, Swaby describes, “The people care so much about their city and I care so much about making culinary innovation front and center at their park. It is an honor to be here.”
“The appointment of our Executive Chef to our leadership team is quite a significant selection for our park,” states Tony Moore, park director. “Gathering Place will have a wholesome focus on food and the impact it will have in enhancing our guest experience. Our Culinary Department, will showcase food in an immersive and appealing manner that will reflect the enjoyment of nutrition by making food fun, healthy and affordable.
