Good Bread Makes Entertaining Easy

Each year, KHITS takes its broadcast on the road for five days. Via Panera supplied food for KHITS’ crew and talent and listeners who came to register for prizes.

An easy and elegant brunch menu is a snap with an egg casserole. Add a leafy green salad and fresh bread for a meal guests will enjoy. Here is a brunch recipe perfect year-round.
Panera Caponata
Serves 6 to 8 people
Preparation and cooking time:
approximately 2 hours.
9 slices Panera Lower-Carb Italian Herb Bread*, crusts removed and cut into 1/2-inch cubes
2 tablespoons butter
8 large eggs
1 cup heavy cream
1 cup water
3/4 cup Mozzarella cheese, shredded
3/4 cup Provolone cheese, shredded
1 teaspoon salt
1 teaspoon dry mustard
1 lb pork sausage, fried in bite-sized pieces
1 bunch fresh basil
Preheat oven to 350 degrees. Butter a 9-inch x 13-inch pan.
In a large bowl, mix eggs, cream, water, cheese, salt, and dry mustard. Add bread and sausage and blend together. Pour into a prepared pan, cover with plastic wrap, and let stand for one hour, refrigerated.
Bake for 35 to 45 minutes or until browned on top. Let cool on rack for 30 minutes. Garnish with basil leaves before serving.
