Get a Taste of New Orleans at Hebert’s

Ed Richard, owner of Hebert’s Specialty Meats, is gearing up for a big Mardi Gras Party on February 8.

The Mardi Gras season begins on January 6 and continues until Fat Tuesday, the day before Ash Wednesday. On the Christian calendar, the twelfth day after Christmas is known as “Epiphany,” “Twelfth Night,” or “Kings Day.” It is the day the gift-bearing Magi visited the baby Jesus and is celebrated with its own unique rituals. One of the fun activities of the season is the King Cake Party. The parties start on “Kings Day” and a “Kings Cake” is served. The cake, a coffee cake made in a circle, has a small baby doll hidden inside before it is baked. The outside is decorated with icing of Mardi Gras colors. The colors, chosen in 1872 by Rex, the King of Carnival, are purple, which represents justice; green, which stands for faith; and gold, which stands for power. When the cake is served, the person getting the baby representing the Christ child is the one to have the next party. The parties, usually one a week, last through the Mardi Gras season and end on Mardi Gras.
